In a ceramic bowl, combine yeast and sugar. Add 1 cup of warm water (around 100 degrees) and let it combine for a couple of minutes. Add salt and flour, mix them well you can use your hand or a fork whatever you are more familiar with until the dough becomes firm. Massage the dough with your hand for 1 minute, then form it into a soft ball place it in a second bowl with the olive oil and let it rest until it get’s double in size. Next we make our sauce cut the tomatoes into large pieces, put all the sauce ingredients into a blender and blend until everything becomes paste.
For the topping we grate the KOLIOS VEGAN into a bowl, with the cheese grater, using the large blades. We are cut the stem of the peppers, and throw away it seeds then we cut them in pieces. After that cut the baby tomatoes in half.
On a flour-dusted surface, press and shape the dough until it becomes flat like a coin, keeping the crust on the thicker side so the sauce won’t drop off. Pour the sauce on top of your dough and spread it with a spoon.
Season with the KOLIOS vegan, the peppers and for last the tomatoes.
Preheat the oven in 220 ºC, place it in the over for about 15 minutes.
