Baking Feta with olives. A delicious Greek mezé! Ingredients 400g KOLIOS Feta Cheese in brine 200g Kalamata Olives 200g Green Olives 12 Fresh Thyme Sprigs 2 Tablespoons Olive Oil Preparation Preheat your oven to 180°C degrees. Drain the feta cheese and cut into cubes. Similar size to the olives. Get a baking dish and add the drained green olives then the cubed feta cheese and the drained kalamata olives. Gently toss so everything is evenly distributed in the baking dish. Add 10 sprigs of fresh thyme and drizzle with 2 tablespoons of olive oil. Bake the feta and olives at 180°C for 25 minutes, then broil for 3-4 until nicely browned on top.

Ingredients • 2 Tomatoes  • 100g KOLIOS FETA PDO cheese • 2 Dakos • 3 Tbsp olive oil  • 1 tbs oregano • salt Preparation We start by tossing the dakos occasionally into the water until they become a little bit softer, then you smash them into large pieces and you place them in the bottom of your bowl. Roughly chop the tomatoes into pieces, place the tomatoes in a bowl and season with salt. Then you crumble the FETA into large chunks and place it on top of the salad. Sprinkle over the oregano and the olive oil let it rest for 3 minutes and the flavours will soak into the dakos. Mix them all together and voila the Cretan salad is ready!

Crumbled Feta Serves 2-4 Difficulty: Easy   Ingredients • 100g Authentic FETA KOLIOS • 3 peppers • ½ cucumber • 8 baby tomatoes • 1 red onion • ½ garlic • cress   Dressing • 3 Tbsp Balsamic • 6 Tbsp Olive oil • 1 tsp Honey • 1 tsp Mustard • Salt & Pepper   Preparation Deseed and slice the peppers, peel and slice the cucumber and onion. Cut the baby tomatoes in half and smash the garlic. Combine all the ingredients except crumbled FETA in a salad bowl. Meanwhile, make your dressing by combining the balsamic, olive oil, honey and mustard and seasoning in small bowl. Mix well. Dress the vegetables and crumble over the FETA, then gently toss everything together.

A recipe with Greek holiday spirit! A light, healthy and tasteful meal, very easy to prepare - also very popular to the lovers of vegetarian cuisine. Serve it with white bread , such as baguette. Preparation time: 10 min Ingredients • 150 - 200g KOLIOS FETA cheese cut in cubes • 3-4 tomatoes • 1 small cucumber • 1 onion • 1/2 green bell pepper, seeded and sliced • few black olives • 3 spoonfuls of olive oil • 1 spoonful of vinegar (white wine vinegar or apple vinegar) • salt • oregano (or parsley) Preparation Cut the tomatoes, the onion, the cucumber and the bell pepper in slices. Mix them in a salad bowl. Add the Feta cheese, add the olives and some oregano. Season the salad with the olive oil, the vinegar and the salt.
